This is a great recipe to warm up these cold winter nights. Living in Wisconsin I know my fair share of frigged weather. Simple, and to the point, with that nostalgic feel of home.

Ingredients:
1 Tbs Olive Oil
1 Large Onion Chopped
2 Cloves of Garlic Minced
2 Carrots Chopped
2 Stalks Of Celery Chopped
6 Cups Vegetable Stock
Pinch Turmeric
1 Bay Leaf
1 Tbsp Freshly chopped parsley
1/2 Tsp Dill
Salt, and pepper to taste
6oz Noodles (Fettuccine broken up, or Spiral noodles) Your choice
Garnish:
Small Amount of freshly chopped Parsley in the center, and a little freshly cracked black pepper

Process:
Step 1 - Heat Olive Oil in a Large pot on medium heat, add your Onion, Carrots, Celery, and Garlic. Cover and allow to cook for about 5 to 10 minutes stirring occasionally. When your veggies begin to brown on the outside, and your onions begin to become translucent you’re ready to move to the next step.
Step 2 - Add Vegetable Stock, Bay Leaf, Parsley, Dill, Salt, and Pepper. Stir together and increase heat to medium-high. Cover and allow to boil for about 20 Minutes. or until carrots become tender. Stirring occasionally.
Step 3 - Add noodles, and cook until al dente. Serve Right away.
