Tofu "chicken" nuggets

Ingredients:
- 1 block firm or extra firm tofu, pressed
- 1/3 cup soymilk
- 2 tbsp mustard
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried parsley (optional)
- 1/2 tsp black pepper
- 1 tbsp nutritional yeast (optional)
- 3/4 cup bread crumbs - in a bowl
Optional:
- 1 cup apple juice
- a drizzle of soy sauce
Process:
- To start off, cut your tofu into desired proportions for the nuggets. You can experiment with different thicknesses to get desired texture. I did mine about 1 inch by 1/2 inch. (Optional: Once cut, place your tofu in a shallow dish and pour your apple juice and soy sauce over it. Put this in the fridge and let stand 10 minutes to half an hour.)
- If you choose to marinade your tofu, wait for this step until you are ready to take it out. Combine in a bowl your soy milk, mustard, nutritional yeast, and spices. Whisk this together thoroughly
- If needed, drain your tofu, make sure to get as much marinade off as possible. Begin dipping your tofu into the soy milk mixture and breading it with the bread crumbs.
- Once your tofu is breaded, we move onto cooking. You can either fry or bake the tofu
Simply heat up your oil, and carefully place your tofu in. Let it fry until golden brown. Remove and let the extra oil soak up on a plate with paper towels.
Baking:
Heat your oven to 350 degrees F, place your tofu on a covered baking sheet. Place this in the oven for 25 minutes, turning once.
